Christmas Cake Goodness

Whether you’re the sort who plans ahead or the kind who suddenly remembers on December 23rd (no judgment here), this small 6″ Christmas cake is just right.

It’s the perfect size for a quiet holiday table or to gift to a friend wrapped in parchment and ribbon. You can bake it four weeks before Christmas to let the flavors mellow with a splash of brandy or orange juice every few days… or, bake it the day before, when the house is already warm from other preparations, and it will still taste lovely.

I’ve found this Small Round Christmas Cake recipe from Easy Peasy Foodie, to fit a 6″ round tin, rich with dried fruits, warm spices, and a hint of citrus. The kind of cake that feels like Christmas even before the first bite.

Tip: Wrap the cooled cake in baking parchment and store in a tin (or foil) until you’re ready to ice it—or not! It’s wonderful as is, perhaps with a cup of tea while you admire your tree.
