Chocolate Chip-Cranberry Bread Pudding for Two

  • 2 slices day-old  bread, cut into cubes, divided between ramekins
  • 2 Tblsp chocolate chips, divided between ramekins
  • 1 Tblsp dried cranberries, divided between ramekins
  • 2 eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of salt

  • 1. Divide bread, chocolate chips and dried cranberries between two greased ramekin dishes; set aside. In a bowl, beat eggs, milk, sugar, vanilla, cinnamon, nutmeg and salt. Pour over bread. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Cool slightly. Serve warm. Makes 2 servings

A great way to use up those bread ends. Also, serves two means two for me!
