What a wonderful way to spend the Lunar (Chinese) New Year than in the Year of the Sheep!
For that I think I need to post a simple, but hearty recipe I have named Spinner’s Stew. You throw it all together and while it bakes for 5-7 hours, you have the freedom to be doing all things wooley. Enjoy!
Spinner’s Stew
1 pound stew meat
1 medium onion, chopped |
4 large Yukon Gold potatoes, cubed |
4 large carrots, sliced |
2 Tblsp sugar |
1 can tomato soup |
½ can water |
½ cup wine |
Mix all together, cover and cook at 250 F for 5-7 hours. |
Do not remove lid. (I don’t add salt, the soup has plenty of sodium) |
Serve with rolls. Makes 2-4 servings. |
