What a wonderful way to spend the Lunar (Chinese) New Year than in the Year of the Sheep!
For that I think I need to post a simple, but hearty recipe I have named Spinner’s Stew. You throw it all together and while it bakes for 5-7 hours, you have the freedom to be doing all things wooley. Enjoy!
1 pound stew meat
|1 medium onion, chopped|
|4 large Yukon Gold potatoes, cubed|
|4 large carrots, sliced|
|2 Tblsp sugar|
|1 can tomato soup|
|½ can water|
|½ cup wine|
|Mix all together, cover and cook at 250 F for 5-7 hours.|
|Do not remove lid. (I don’t add salt, the soup has plenty of sodium)|
|Serve with rolls. Makes 2-4 servings.|
